First reaction is, it's a strenuous itinerary for a group with limited overnight experience & without much overnight/fullpack experience. It's a common suggestion to build in a "zero" day to accommodate any number of unforeseen situations including weather. Plan it more towards the end...

I've never been but after a bit of research it does look interesting. In places, it has similar volcanic origin geology as that on The Island. The main downside I see is many of the trails are multiuse to be shared with bikes and horses. Paddling appears to be popular as well.

Given your descriptions and history on The Island, your itinerary appears very OK to me. You have a zero day layover planned to either relax or recover.
