Dehydrating Hash Browns

I normally dehydrate store bought hash browns. They're already cooked and you just need to thaw them and toss them on a tray. I decided to make my own and did 4lbs of them. They're good & dry, but I fried them in olive oil and they're still a bit "lubricated". Not bad, but when I broke them up further and bagged them, my hands were greasy. I'm assuming the olive oil will be ok, but I'm just looking for some reassurance. Anyone have experience with my situation?

No, but I would probably carry the oil separately and add it at cooking time.

Well, it's been a little over a week and half now and they seem to be just fine. I'm now under a week until we go, so I think I'm gonna be able to use them. The last meal (Beef Stroganof) is in the dehydrator now.

I've rehydrated mashed potatoes then lightly fried them in olive oil on the camp stove. I think they taste better than typical hash browns. Give it a shot!!

The hash brown were awesome. We added turkey sausage and then after rehydrating, a couple of dashes of hot sauce. I'm not a big fan of doing dishes while hiking, so all of our meals are dehydrated, freezer bag meals.

Now that a buddy turned me on to Hungry Jack Hash Browns, I don't waste my time trying to dehydrate them. These are good! IMHO
