I've never had an issue with getting the dregs out of a squeeze tube: opening the bottom and sweeping it with a spork or even just twirling through it with a rolled tortilla does the trick.

I'm not sure what I would use mustard or ketchup for on a long trip, but I store spices, syrup, Tabasco, red wine/malt vinegar and other liquids in small reusable storage bottles which all fit inside of my cookset with my other kitchen gear. These come in a wide variety of sizes that will accommodate just about any need. They are all reusable and also reduce the potential of introducing micro-litter into the environment.
