Where can we find the trails with plank walks/ board walks?

I don't know that there is a specific list of trails, there aren't any "boardwalk trails". Many of the trails have boardwalks over very wet areas, ponds, big streams, or delicate areas. There tends to be more on the west end of the island. Looking back at your itinerary you will pass a few.

You’ll find them in a lot of the wet areas. You’ll hit a few on your route.

Great thank you!

It looks like there will be a couple days of thunderstorms coming up... do you have any advice on where to set up tent during the storms to avoid lightning?

The campsites are off the ridges and in wooded areas. You'll be fine in a storm. Just pay attention to overhanging limbs (widow-makers) when you are setting your tent up. You dont want to be under a dead tree or fallen limb.
